This firm, well-veined blue cheese is wrapped in sycamore leaves, which impart a woodsy, earthy flavour and a dark, tannic colour to the edge of the paste. Piquant, acidic and salty, this is a cheese for those with bold tastes. Accompany with a glass of nutty, raisiny Oloroso Sherry and some dried figs for an after dinner treat.
