Bauman’s Smoke

Ruth Klahsen of Monforte Dairy is one of Ontario’s pioneering sheep milk cheese makers, applying her chef’s skills to the creation of a wide range of unique and beautiful cheeses. Bauman’s Smoke is a small, dense, almost chewy disc of tart fresh curds, smoked naturally over maple wood in a Mennonite smoke house. Pronounced “fireside” aromas and flavours make this a perfect cheese for topping charbroiled burgers, or for melting over a smoked turkey sandwich. |
