According to legend, this ash rind chèvre was originally shaped as a perfect pyramid. When Napoleon returned from Egypt, defeated, he apparently chopped off the tops of the offending forms. Whatever its origins, the flat-topped broad shape is well suited for preserving moisture, and maintaining the youthful grassy and citric flavours of fresh goat milk curds.
